Kome (rice), according to Chef Mori, is the most important ingredient in sushi. At Morihiro, we use a milling machine to polish rice imported from Japan daily, as fresh milling is the key to achieving the excellence of Morihiro’s rice.

Chef Mori performs extensive quality control on his rice, periodically measuring the moisture content and caliber of individual grains to ensure the rice meets his high-level standards.

The process of washing rice, although appearing to be a simple task, is also a crucial procedure in preparing rice for cooking. Chef Mori is pleased to share his special expert technique for washing rice!
